Wil Shipley
You can't have a serious conversation about Cocoa programmers without including Wil Shipley. He as been an inspiration to many aspiring Mac developers, lightning having struck twice for him: once as a founder of the OmniGroup, and now as sole soul behind Delicious Monster. His application, Delicious Library has been an example to many on how to best press into service various OS X APIs, while know precisely where to violate Apple's Human Interface Guidelines. Apple apparently agreed, giving him an Apple Design Award in 2005 for "Best User Experience".
In addition to his code-fu with Delicious Monster, he runs a portion of his blog called, "Pimp My Code" that is a must-read for anyone involved in Cocoa development. The main portion of his blog, "Call Me Fishmeal" is some of the best writing you'll find from a Mac developer: seriously funny, fantastic tales, and lessons that remain a joy to read.
